Vegetable and Olive Tagine

Instructions

  • 1.   Wash, peel, and dice the vegetables.
  • 2.   Slice the onion, chop the garlic, and sauté them in olive oil for 5 minutes. Mix in the spices.
  • 3.   Add the diced vegetables, halved olives, and broth. Cover and simmer for 1/2 hour.
  • 4.   Garnish with parsley or cilantro before serving on a bed of couscous with a dollop of harissa.

  • 3 tomatoes
  • 1 onion
  • 1 garlic clove
  • 100 g of olive
  • 1 tablespoon of ras el-hanout
  • 150 ml of vegetable broth
  • 1 tablespoon of olive oil
  • salt (according to taste)
  • pepper (according to taste)
  • parsley (according to taste)
