Instructions

. Wash, peel, and dice the vegetables.

. Slice the onion, chop the garlic, and sauté them in olive oil for 5 minutes. Mix in the spices.

. Add the diced vegetables, halved olives, and broth. Cover and simmer for 1/2 hour.

. Garnish with parsley or cilantro before serving on a bed of couscous with a dollop of harissa.
