Instructions

1. Wash and poach the potatoes, previously cut into cubes, in salted water. Then mash them (using a mill or by mashing with a fork).
2. Place the obtained mashed potatoes in a bowl, add an egg, chopped parsley and coriander, crushed garlic, cumin, and turmeric.
Season with salt and pepper, and mix everything together.
3. Shape small galettes (slightly flattened balls), dip each one in a bowl containing beaten egg, then coat them with flour on both sides.
4. In hot frying oil, immerse the maakouda and fry them until golden brown on both sides.
