Chicken Tajine with Preserved Lemon

Instructions

  • 1.   Cut the preserved lemon into quarters on your cutting board.
  • 2.   Remove the pulp and remove the seeds.
  • 3.   Finely chop the peel.
  • 4.   Peel and rinse the onion and garlic.
  • 5.   Slice the onion, then mash the garlic into a paste.
  • 6.   In a pot over medium heat, pour 3 tablespoons of olive oil.
  • 7.   Add the meat to the pot, season with pepper, and add the onion.
  • 8.   Sprinkle with 1 tablespoon of spice mix and stir for 1 minute.
  • 9.   Add the lemon pulp and peel, olives, and garlic.
  • 10.   Cover with 20 cl of water.
  • 11.   Let simmer for 40 minutes.
  • 12.   halfway through cooking, check the preparation and add water if needed.
  • 13.   Serve with potatoes.
