Instructions

  • 1.   Brown the chicken on all sides in a pot with a little olive oil.
    Meanwhile, cut the vegetables.
  • 2.   Once the chicken is browned, add the vegetables and cover.
    Cook for 30 minutes over medium heat.
  • 3.   Remove the lid and let cook for 15 minutes over medium heat + (to allow excess water to evaporate).
