Bread or Brioche Pudding (stale)

Bread pudding, Pain d'chien, diplomat... no matter what you call it, it remains an excellent way to use up leftovers! (bread, brioche, and even fruits!) Economical and anti-waste! Candied orange, soaked raisins, brown sugar, vanilla, cinnamon, rum, pear, apple, banana, chocolate, hazelnuts... the list is endless and can even be made in a savory version!

Instructions

  • 1.   Warm the milk and flavor it if necessary (vanilla or any other infusion...)
    If you have chosen the option of soaked raisins, put them in water.
    Preheat the oven to 180°C (350°F).
  • 2.   In a bowl, put the bread (with its crust) cut into pieces (large cubes) and add the warmed and flavored milk. (Brioche, milk bread, etc... also work!)
    You can easily adjust the amount of milk for a more or less moist cake, it's up to you. Let it soak for several minutes, then mash the bread in the bowl with a fork.
  • 3.   If you have chosen fresh fruits, peel and dice them, then add them to the bowl.
    Also add the soaked raisins and/or jam, a pinch of cinnamon, rum, large chocolate chips, candied fruits, a little orange or almond juice or flavoring, hazelnuts, prunes... basically, go crazy.
    (don't forget the savory option: onion, leek, feta cheese, goat cheese, sun-dried tomatoes, ham, zucchini...)
  • 4.   Also add the beaten eggs and sugar (vanilla, brown sugar...). CAUTION: depending on the filling, you may need to adjust the amount of sugar. Follow your taste!
    Mix well.
  • 5.   Line a tart or loaf pan with parchment paper. Fill it with the mixture and smooth the top with a spatula.
  • 6.   Bake for 40-45 minutes. Remove from the oven, let it cool slightly, then unmold.
    Serve warm or cold with a sprinkle of powdered sugar for decoration. Store in the refrigerator for 2 to 3 days.
