Incredible Chocolate Mousse with Water

With just chocolate and water! Yes, you read that right, you can make a real chocolate mousse with just water and chocolate. It's a change from versions with sugar, beaten egg whites, or whipped cream.

Instructions

  • 1.   Step 1: Pour the chocolate
  • 2.   Pour the chopped chocolate into a saucepan.

    Step 2: Add cinnamon
  • 3.   Add ground cinnamon or the spice of your choice.

    Step 3: Add water
  • 4.   Add water or another liquid (tea, infusion, fruit juice, etc.)

    Step 4: Heat
  • 5.   Melt the chocolate in the water over low heat, whisking occasionally.

    Step 5: Prepare an ice bath
  • 6.   Put about fifteen ice cubes in a bowl with a little water and place a second bowl in the first one.
  • 7.   Step 6: Pour the melted chocolate
  • 8.   When the chocolate is melted and the mixture is smooth, pour it into the bowl placed on the ice bath.

    Step 7: Whisk
  • 9.   Whisk the mixture, preferably with an electric whisk.

    Step 8: Continue whisking
  • 10.   At first, not much happens, the mixture remains liquid. After about 5 minutes, the whisk starts to leave traces.

    Step 9: It's done
  • 11.   Once the whisk leaves traces, the mixture will quickly transform into mousse. Be careful so that the mixture does not turn into cocoa butter as it would become grainy.
  • 12.   Stop whisking as soon as the mousse texture is achieved.

    Step 10: Serve
  • 13.   Serve with a little praline or crushed hazelnuts. The mousse holds for several days, you can prepare it in advance and store it in the refrigerator in a bowl covered with plastic wrap.

Notes & Suggestions

  • The water can be flavored with tea, orange.
