Vinegar Eggs

Vinegar eggs, also known as pickled eggs, are highly appreciated in bars and pubs in the United States and the United Kingdom. This recipe is easy to prepare. Hard-boiled eggs are marinated in vinegar flavored with spices.

Instructions

  • 1.   Place the eggs in a saucepan. Cover them with ½ liter of water. Make sure the eggs are submerged under at least 2.5 cm of water above the eggs.
  • 2.   Pour 150 ml of distilled white vinegar into the water. This will help the egg whites coagulate faster if the eggs crack. Boil the water for 15 minutes over medium heat.
  • 3.   Leave the eggs in the hot water. If you have eggs that cracked during cooking, they will not marinate as well as they should. Remove the eggshells and place the eggs in a glass jar.
  • 4.   Prepare a brine by boiling 1.5 liters of water with sugar, chili peppers, beetroot, pepper, and 150 ml of vinegar for 15 minutes.
  • 5.   Strain the mixture and pour it over the eggs in the jar. Close the jar and refrigerate for 3 days before serving.

  • 1 cooked beetroot (optional)
  • 30 cl of vinegar
  • 30 g of sugar
  • 1 liter of water
