Viennese Baguettes

Instructions

  • 1.   Start by dissolving the yeast in a little warm water. Let it foam for about 15 minutes.
  • 2.   In a bowl, pour the flour, salt, and sugar.
  • 3.   Add the yeast and the milk.
  • 4.   Knead for 5 minutes, then add the room temperature butter and knead for a few more minutes until the dough comes away from the sides.
  • 5.   Form a ball and cover the dough until it doubles in size (depending on the room temperature).
  • 6.   Lightly flour the work surface, deflate the dough, divide it into 4 portions, and shape them into 4 Viennese baguettes.
  • 7.   Brush the surface of the baguettes with milk. Make incisions with a knife.
  • 8.   Let the baguettes rise a second time in a draft-free place (about 40 minutes).
  • 9.   Preheat the oven to 180°C (350°F) and bake for 15 minutes.

  • 10.   Let cool on a wire rack.

Notes & Suggestions

  • You can add chocolate chips before the first rise.

  • 270 ml of milk
  • 1 tablespoon of dried baker's yeast
  • 40 g of sugar
  • 1 tablespoon of vanilla sugar (optional)
  • 3 g of salt
  • 60 g of butter

    The recipe is perfect. We made it into baguettes but also in a sandwich loaf pan and it turned out great.
