. Start by dissolving the yeast in a little warm water. Let it foam for about 15 minutes.

. In a bowl, pour the flour, salt, and sugar.

. Add the yeast and the milk.

. Knead for 5 minutes, then add the room temperature butter and knead for a few more minutes until the dough comes away from the sides.

. Form a ball and cover the dough until it doubles in size (depending on the room temperature).

. Lightly flour the work surface, deflate the dough, divide it into 4 portions, and shape them into 4 Viennese baguettes.

. Brush the surface of the baguettes with milk. Make incisions with a knife.

. Let the baguettes rise a second time in a draft-free place (about 40 minutes).

. Preheat the oven to 180°C (350°F) and bake for 15 minutes.

. Let cool on a wire rack.

The recipe is perfect. We made it into baguettes but also in a sandwich loaf pan and it turned out great.
