Instructions
1. Peel and dice the butternut squash. Cook it in a pan with ½ cup of water for 10-15 minutes. It should be cooked but still firm.
2. Meanwhile, peel and slice the mushrooms. Cook them in 1 tablespoon of oil.
3. In a bowl, mix the eggs with the yogurt, salt, pepper, and garlic powder. Mix well.
Cut the cooked ham into small pieces.
4. In a gratin dish, layer half of the butternut squash at the bottom, then add the mushrooms and the diced ham on top.
Pour half of the egg/yogurt mixture over the ingredients.
Add the remaining half of the butternut squash on top, then pour the rest of the mixture.
Sprinkle grated gruyère cheese on top.
5. Bake the gratin for 25-30 minutes at 180°C (350°F).
