Butternut, Ham, and Mushroom Gratin

Instructions

  • 1.   Peel and dice the butternut squash. Cook it in a pan with ½ cup of water for 10-15 minutes. It should be cooked but still firm.
  • 2.   Meanwhile, peel and slice the mushrooms. Cook them in 1 tablespoon of oil.
  • 3.   In a bowl, mix the eggs with the yogurt, salt, pepper, and garlic powder. Mix well.
    Cut the cooked ham into small pieces.
  • 4.   In a gratin dish, layer half of the butternut squash at the bottom, then add the mushrooms and the diced ham on top.
    Pour half of the egg/yogurt mixture over the ingredients.
    Add the remaining half of the butternut squash on top, then pour the rest of the mixture.
    Sprinkle grated gruyère cheese on top.
  • 5.   Bake the gratin for 25-30 minutes at 180°C (350°F).
