Instructions
1. Start by peeling your onion and sauté it in 2 tablespoons of olive oil.
2. Meanwhile, rinse your zucchini and mushrooms and cut them into small pieces. Add them to the onion. Continue cooking.
3. Cut the chicken into small cubes and add it to the vegetables.
4. Season with salt and pepper and add the mustard. Mix well.
5. Rinse your quinoa with water and add it to the vegetable/chicken mixture with 300 ml of water. (Just so you know, I started with 250 ml and added about 50 ml towards the end of cooking). Cook for about 15 minutes, stirring every 5 minutes.
Serve in shallow plates.
