Quinoa risotto-style

Instructions

  • 1.   Start by peeling your onion and sauté it in 2 tablespoons of olive oil.
  • 2.   Meanwhile, rinse your zucchini and mushrooms and cut them into small pieces. Add them to the onion. Continue cooking.
  • 3.   Cut the chicken into small cubes and add it to the vegetables.
  • 4.   Season with salt and pepper and add the mustard. Mix well.
  • 5.   Rinse your quinoa with water and add it to the vegetable/chicken mixture with 300 ml of water. (Just so you know, I started with 250 ml and added about 50 ml towards the end of cooking). Cook for about 15 minutes, stirring every 5 minutes.
    Serve in shallow plates.

  • 300 ml of water
  • 30 g of mustard
