Instructions
1. Wash, peel, and grate the zucchini, keeping the small amount of juice (here, the zucchini replaces butter so you won't taste it)
Wash and dice the pepper into small pieces
2. In a bowl, mix the egg, yogurt, flour, and baking powder
Add the grated zucchini, grated gruyere cheese, diced pepper, and mustard
Season with salt and pepper, and add a drizzle of olive oil
3. On a baking sheet lined with parchment paper, place the desired amount of dough depending on the size of the desired cookies (remember to space them out sufficiently)
4. Bake in a preheated oven at 180°C (356°F) with convection for about 13 minutes.
Enjoy hot or cold with a good salad, for example.
