Instructions

  • 1.   Wash, peel, and grate the zucchini, keeping the small amount of juice (here, the zucchini replaces butter so you won't taste it)
    Wash and dice the pepper into small pieces
  • 2.   In a bowl, mix the egg, yogurt, flour, and baking powder
    Add the grated zucchini, grated gruyere cheese, diced pepper, and mustard
    Season with salt and pepper, and add a drizzle of olive oil
  • 3.   On a baking sheet lined with parchment paper, place the desired amount of dough depending on the size of the desired cookies (remember to space them out sufficiently)
  • 4.   Bake in a preheated oven at 180°C (356°F) with convection for about 13 minutes.
    Enjoy hot or cold with a good salad, for example.
