Instructions

  • 1.   Make a shortcrust pastry using 375 g of flour, 150 g of butter, a pinch of salt, and a little water to moisten.
  • 2.   Peel and slice the onions. In 50 g of gently heated butter, soften and brown the onions without further coloring.
  • 3.   At the same time, heat 50 g of butter in a saucepan and add the flour: mix and let it cook for a few moments to obtain a smooth and frothy mixture, then pour in the milk while stirring constantly.
  • 4.   Season and let it thicken for a few minutes after boiling.
  • 5.   Remove the sauce from the heat and add the egg yolks. Pour the browned onions into the sauce and check the seasoning.
  • 6.   Line the pie dish with the shortcrust pastry: fill it with the onion mixture, filling it only halfway. Scatter the bacon evenly on top.
  • 7.   Cover everything with the remaining pastry, sealing the edges well and making a small hole in the center.
  • 8.   Bake in a moderate oven (180-200°C) for 45 minutes and serve very hot.
