Instructions
1. Make a shortcrust pastry using 375 g of flour, 150 g of butter, a pinch of salt, and a little water to moisten.
2. Peel and slice the onions. In 50 g of gently heated butter, soften and brown the onions without further coloring.
3. At the same time, heat 50 g of butter in a saucepan and add the flour: mix and let it cook for a few moments to obtain a smooth and frothy mixture, then pour in the milk while stirring constantly.
4. Season and let it thicken for a few minutes after boiling.
5. Remove the sauce from the heat and add the egg yolks. Pour the browned onions into the sauce and check the seasoning.
6. Line the pie dish with the shortcrust pastry: fill it with the onion mixture, filling it only halfway. Scatter the bacon evenly on top.
7. Cover everything with the remaining pastry, sealing the edges well and making a small hole in the center.
8. Bake in a moderate oven (180-200°C) for 45 minutes and serve very hot.
