Salmon with Mango

Instructions

  • 1.   Preheat the oven to 190°C (375°F).
  • 2.   Rinse and pat dry the salmon fillets. In a baking dish, pour the white wine and add the shallot, then place the fish fillets on top. Bake for 10 minutes.
  • 3.   Drain the mango pieces. Set aside a nice piece and blend the rest.
  • 4.   Dissolve the hollandaise sauce in 20cl (3/4 cup) of hot water and 20g (1.5 tablespoons) of butter. Add the lemon juice. Mix and heat for 3 minutes over low heat. Add the blended mango, season with salt and pepper.
  • 5.   On warm plates, serve a portion of salmon, drizzle with sauce, and garnish with one or two pieces of mango.

  • 1 lemon juice
  • 1 glass of dry white wine
  • 1 cup of mango
  • 1 bag of hollandaise sauce
  • salt (according to taste)
  • pepper (according to taste)
