Instructions

  • 1.   Heat the butter in a saucepan and sauté the peeled and minced shallot. Add the white wine and let it reduce by half.
  • 2.   Pour in the cream, season with salt and pepper, add the herbs de Provence, and let it simmer gently, stirring occasionally.
  • 3.   Cook the salmon fillets as desired. Baking them in the oven with oil and salt works well.
  • 4.   Divide the sauce among the plates, place the salmon fillets on top, and serve immediately.
