2. Peel and pit the avocados, cut the flesh into pieces and put them in the bowl of a blender. Peel the garlic and shallots, slice them and add them to the bowl with the avocado. Add the parsley stems, freshly squeezed lemon juice, and olive oil. Blend until smooth. Pour it into a large bowl. Step 2:
3. Bring a large pot of water to a boil. Add salt to the boiling water. Pour the spaghetti into the boiling water and cook them for the time indicated on the package for an "al dente" texture (about 8 to 10 minutes). While the pasta is cooking, scoop out 10 cl of cooking water with a ladle and pour it into the avocado sauce. Mix well. Step 3:
4. As soon as the pasta is cooked, drain it and pour it into the avocado sauce.
5. Mix well, season with salt and pepper.
6. Add the halved cherry tomatoes and sprinkle with chopped parsley. Serve hot.
