1. Wash and quarter the apples, sauté them in salted butter in a hot pan.
2. Meanwhile, cut the pork tenderloin in half lengthwise and fill it with Brie. When the apples are caramelized, add them to the filling.
Close the tenderloin and tie it together.
3. Preheat the oven to 200°C (400°F).
Sear the pork tenderloin in a pan on all four sides.
4. Place the tenderloin in an ovenproof dish with a bouquet garni. Pour a glass of water into the dish and add two or three pieces of butter for extra richness. Season with salt and pepper.
Bake for about 20 minutes at 200°C (400°F), basting the tenderloin regularly and flipping it halfway through cooking.
5. Once cooked, remove from the oven, season with pepper, and let it rest covered for about 10 minutes.
