Companion Liver Mousse

Liver mousse made with the companion. Recipe taken from the Facebook group "La confrérie de la charcuterie Maison" and adapted to be used with the companion. I used deer liver, but I suppose it can be made with other products. (And certainly improved).

Instructions

  • 1.   Place the diced deer liver in salt for 4 hours.
  • 2.   Put the onion and shallot pieces in the companion bowl with the ultrablade. (Speed 10 for 15 seconds)
  • 3.   Replace the ultrablade with the mixer and put the onion and shallot back in the bottom of the bowl with two tablespoons of olive oil. (120°C and speed 3 for 4 minutes). Set aside for later.
  • 4.   After cutting the pork throat into pieces, grind it on the finest setting (requires a grinder). Otherwise, ask the butcher to grind it for you.
  • 5.   Put the ground pork fat, milk, thyme, and bay leaf in the companion bowl with the mixer. (Temperature 95°C, speed 3 for 35 minutes).
  • 6.   Once finished, replace the mixer with the ultrablade and emulsify the mixture (after removing the thyme and bay leaf). (Speed 10 for 20 seconds).
  • 7.   Gradually add the pieces of liver (in three batches) to the companion, 10 seconds at speed 10 each time.
  • 8.   Add the pepper, nutmeg, and potato starch, then restart the companion for 10 seconds at speed 10.
  • 9.   Then add the eggs and cognac, and run the companion one last time at speed 10 for 20 seconds.
  • 10.   Put the emulsion into jars. Cook in a water bath for 45 minutes. Oven at 100°C.
  • 11.   Let it rest in the fridge overnight before enjoying.

  • 300 g of deer liver
  • 600 g of pork throat
  • 300 ml of milk
  • 22 g of fine salt
  • 3 g of pepper
  • 3 g of nutmeg
  • 3 eggs
  • 12 g of potato starch
  • 2 bay leaves
  • 1 onion
  • 1 shallot
  • 4 tablespoon of Cognac
  • 2 thyme
  • 2 tablespoon of olive oil
