Two-tone light mackerel rolls in puff pastry

Instructions

  • 1.   Preheat the oven to 180°C (350°F).
  • 2.   Drain (or cook if fresh) the mackerel fillets and crumble them in a bowl using a fork.
  • 3.   Unroll the pastry on a work surface. Brush one half with pesto, the other half with tomato paste, then sprinkle with mackerel crumbs.
  • 4.   Roll the pastry tightly to form a log, and wrap it tightly in plastic wrap before placing it in the freezer for 30 minutes.
  • 5.   Remove the plastic wrap and cut the log into slices about 1 to 2 cm (0.4 to 0.8 inches) thick.
  • 6.   Place these slices flat on a baking sheet lined with parchment paper, then bake for 12 minutes... and consume in moderation!
