Crepe Cake with Pastry Cream and Grand Marnier

Instructions

  • 1.   Preheat the oven to 350°F (180°C).
  • 2.   To prepare the crepes, pour sifted flour into a bowl, make a well in the center, and gradually pour in half of the water and milk mixture while stirring with a spatula. Mix well.
  • 3.   Add the beaten whole eggs gradually while stirring, then add the sugar, salt, oil, remaining liquid, vanilla, and Grand Marnier. The batter should become "light".
  • 4.   Let the batter rest for 1 hour.
  • 5.   Cook the crepes in a pan over low heat, flipping them to cook both sides.
  • 6.   To prepare the pastry cream, heat the milk in the microwave.
  • 7.   Mix 2 egg yolks, 1 whole egg, vanilla, sugar, Grand Marnier, and flour.
  • 8.   Heat the mixture in the microwave several times, stirring until thickened.
  • 9.   Mix the cream, candied fruits, and butter.
  • 10.   Spread the cream mixture on each crepe, then stack them.
  • 11.   Sprinkle powdered sugar on top.
  • 12.   Place them on a buttered dish and bake for 15 minutes.

  • 1 tablespoon of margarine
  • 3 eggs
  • 1 cup of candied fruit
  • 2 tablespoon of powdered sugar
  • 2 tablespoon of Grand Marnier
  • salt (according to taste)
