Carrots

Vichy or glazed, carrots are great

Instructions

  • 1.   Peel or scrape the carrots.
    => Vichy: cut them into small slices
    => Glazed: leave them whole (but choose small ones)
  • 2.   In a pan, over low heat, melt the butter and then add the carrots.
    => Vichy: add spices according to your taste (cumin, curry, herbs..)
    Stir a little to coat the carrots well and add water (the carrots should be covered).
  • 3.   Season with salt and pepper and let simmer uncovered for:
    => Crunchy: 10 minutes
    => Tender: 20/25 minutes
    => Whole carrots: +10 minutes to the specified time
    Check by poking the tip of a knife
  • 4.   => Glazed: add sugar (or honey) and vinegar and let glaze for a few minutes, stirring well to coat.

  • 1 tablespoon of balsamic vinegar (optional)
