Instructions

  • 1.   Peel the tomatoes and peppers using a suitable peeler. Cut the tomatoes into large cubes. Slice the peppers, onions, and garlic. Sauté everything in a casserole dish with olive oil. Cover and let sweat for 5 minutes over low heat.
  • 2.   Place the (previously thawed) shrimp on top, add the coconut milk and 4 dl of water. Do not stir and do not let it boil. Cover and maintain a gentle simmer for 25 minutes.
  • 3.   Add the lemon juice, turmeric, pepper, and salt. Add the coriander leaves, garnish with lime, and serve.

  • 40 cl of coconut milk
  • 4 tablespoon of olive oil
  • 1 bunch of fresh coriander

  • 1 tablespoon of turmeric powder
  • 3 tomatoes
  • salt (according to taste)
  • pepper (according to taste)
