ZUCCHINI, GOAT CHEESE & HAM CAKE, not dry and super tasty from 0sugar_and_lowGI

I had a big slice with a salad, the zucchini gives it a deliciously moist texture. I used oat bran for the fiber and a lower glycemic index, but you can replace it with spelt flour.

Instructions

  • 1.   Cut the zucchini into small, thin pieces and cook in a pan with a little olive oil until the pieces are just tender.
  • 2.   Mix the flours, oat bran, and baking powder. Add the eggs one by one and mix. Pour in the oil and plant-based milk. Season with salt and pepper.
  • 3.   Add the zucchini, ham, and goat cheese. Pour into a loaf pan and bake for 30 minutes at 200°C.

  • 10 g of baking powder
  • 130 g of plant-based milk
  • 50 g of olive oil
  • 3 eggs
  • 3 small zucchini
