Roquefort & Chorizo Mussels

Instructions

  • 1.   Sauté the onion in garlic butter, add the sliced celery, leeks, and carrots.
  • 2.   Add the rinsed and scrubbed mussels to the pot, along with the cream, diced roquefort cheese, and chorizo. Simmer covered, stirring often.
  • 3.   Once the mussels have opened, adjust the seasoning and add a little coriander.

    Serve hot!

  • 20 g of garlic butter
  • 300 ml of heavy cream
  • 1 fresh coriander
  • 1 Espelette pepper
  • 2 carrots
  • 2 leeks
  • 1 large onion
  • 3 stalk of celery stalk
  • salt (according to taste)
  • pepper (according to taste)
