Instructions
1. Sauté the onion in garlic butter, add the sliced celery, leeks, and carrots.
2. Add the rinsed and scrubbed mussels to the pot, along with the cream, diced roquefort cheese, and chorizo. Simmer covered, stirring often.
3. Once the mussels have opened, adjust the seasoning and add a little coriander.
