Fig and Bacon Quiche

Instructions

  • 1.   It is preferable to use homemade shortcrust pastry, which can be made with semi-wholemeal or cereal flour for added fiber.
  • 2.   Roll out the pastry and line the pie dish, shaping the edges and pricking it with a fork. Cover with dried beans and bake for 15 minutes.
  • 3.   In a frying pan, brown the bacon and onion for 5 minutes, then add the sliced cabbage.
  • 4.   Prepare the quiche filling with eggs and crumbled feta cheese.
  • 5.   On the pre-baked pastry, place the bacon, onions, and cabbage, then pour in the quiche filling. Arrange the quartered figs and thyme on top.
  • 6.   Bake for approximately 45 minutes, until the surface is golden.
  • 7.   Allow to cool for 10-15 minutes and enjoy 😋
