Instructions

  • 1.   Separate the yolks from the whites. Set aside the yolks. Put the whites in the bowl with a pinch of salt.
  • 2.   Put the whisk attachment in place and program for 5 minutes at speed 3-4, gradually increasing the speed.
  • 3.   Transfer the whites to a separate container and remove the whisk attachment.
  • 4.   Put the sugar and chocolate in the bowl and blend for 10 seconds at speed 9.
  • 5.   Let it rest in the refrigerator for a few hours before serving.
  • 6.   Add the cream and set for 6 minutes at 50°C (122°F) at speed 1.
  • 7.   Pour the mixture into a bowl and gently fold in the beaten egg whites.
