Cauliflower Croque-monsieur

Instructions

  • 1.   Preheat the oven to 180°C (350°F).
    Cut the cauliflower into florets and wash them.
    Blend the cauliflower.
  • 2.   In a bowl, mix the blended cauliflower, eggs, chopped parsley, and parmesan cheese.
    Season with salt and pepper.
  • 3.   On a baking sheet lined with parchment paper, place cauliflower patties made with a round cookie cutter.
  • 4.   Bake for 20 minutes.
  • 5.   On half of the cauliflower patties, place a slice of trout (or ham), some cream cheese, and another cauliflower patty.
  • 6.   Bake again for 5 to 10 minutes, until the cheese melts like in a croque-monsieur.

  • 1 cauliflower
  • 2 eggs
  • 60 g of grated parmesan
  • 4 slice of smoked trout
  • 120 g of grated Comté cheese
  • 1 tablespoon of thick sour cream
