Indian-style Potatoes Aloo Bombay

Instructions

  • 1.   Heat olive oil and ghee in a pan. Add cumin and caraway seeds and cook for 30 seconds. Add the diced onion. Add finely chopped ginger and red chili paste.
  • 2.   Add the diced potatoes and tomatoes and let them brown while stirring with a wooden spoon. Add chili powder, turmeric, garam masala, black pepper, salt, and mix.
  • 3.   Simmer for 20-30 minutes, until the potatoes are cooked. At the end of cooking, add freshly chopped coriander. Optionally, drizzle with a squeeze of lemon juice.

  • 1 large canned crushed tomatoes
  • 1 onion
  • 1 garlic clove
  • 1 teaspoon of garam masala
  • 1 teaspoon of turmeric powder
  • 2 tablespoon of olive oil

  • pepper (according to taste)
  • parsley (according to taste)
