Chocolate Caramel Mousse

Instructions

  • 1.   Separate the egg whites from the yolks.
  • 2.   Mix the yolks with powdered sugar.
  • 3.   In a saucepan, gently melt the broken pieces of chocolate with the butter. Add the yolk-sugar mixture and cook for a few minutes over low heat, stirring constantly.
  • 4.   Beat the egg whites until stiff peaks form, adding a pinch of salt if using unsalted butter. Gently fold them into the chocolate mixture.
  • 5.   Pour into small ramekins or glasses and refrigerate for several hours, ideally overnight.
  • 6.   Decorate with chocolate shavings just before serving.
