Semolina, Chickpea, and Crispy Vegetable Bowl | 7V 5B WW

Instructions

  • 1.   Pour the semolina into a bowl. Cover with about 200 ml of boiling water. Cover and let it swell for 5-6 minutes. Fluff with a fork and let it cool. Drain the chickpeas. Set aside.
  • 2.   Peel and grate the carrot and onion coarsely. Mix them together. Rinse the radishes and cut them into thin slices. In a bowl or a large shallow plate, arrange the semolina, chickpeas, carrot-onion mixture, mixed greens, and radishes in a circle. Sprinkle with chopped coriander.
  • 3.   Separately, whisk the yogurt with lemon juice, chopped mint, and 4-spice blend. Season the bowl with this sauce and enjoy.

  • 50 g of fine couscous semolina
  • 50 g of chickpeas (canned, drained weight)
  • ½ carrots
  • 1 onion
  • 40 g of radish
  • 20 g of mesclun
  • 10 g of fresh coriander
  • 20 ml of lemon juice
  • 25 g of fat-free white cheese
  • 4 leaf of fresh mint
  • ½ teaspoon of four spices
  • 1 pinch of salt
