1. 1. Melt the broken pieces of chocolate either in a double boiler or in the microwave (medium power). Smooth it out. Separate the egg yolks from the egg whites. Whisk the yolks in a bowl while gradually incorporating the melted chocolate.
2. 2. Beat the egg whites until stiff peaks form with a pinch of salt. Mix 2 tablespoons of beaten egg whites with the chocolate mixture, stirring vigorously to soften it, then gently fold in the remaining egg whites.
3. 3. Pour the mousse into bowls or glasses. Refrigerate for a minimum of 2 hours. Serve chilled.
