Shrimp and Zucchini Gratin | 6 servings, 4 Blue Points, Weight Watchers

Instructions

  • 1.   Preheat the oven to 200°C (400°F). Rinse the zucchini, slice them thinly, sauté them in olive oil, and let them cook for 10 minutes. Drain them at the end of cooking. Cut the shrimp into pieces.
  • 2.   In a bowl, beat the eggs, fresh cream, and half of the gruyère cheese. Add the Espelette pepper, salt, and pepper.
  • 3.   In a gratin dish, layer the zucchini, shrimp, and the egg mixture. Sprinkle the remaining gruyère cheese on top of the dish and bake for 25 minutes.

  • 2 teaspoon of olive oil
  • 300 g of peeled shrimp
  • 2 eggs
  • 4 tablespoon of light cream (12-15%)
  • 4 tablespoon of grated Gruyère cheese
  • 1 g of Espelette pepper
  • 1 pinch of salt
  • 1 pinch of pepper
