1. Preheat the oven to 200°C (400°F). Rinse the zucchini, slice them thinly, sauté them in olive oil, and let them cook for 10 minutes. Drain them at the end of cooking. Cut the shrimp into pieces.
2. In a bowl, beat the eggs, fresh cream, and half of the gruyère cheese. Add the Espelette pepper, salt, and pepper.
3. In a gratin dish, layer the zucchini, shrimp, and the egg mixture. Sprinkle the remaining gruyère cheese on top of the dish and bake for 25 minutes.
