Chicken Tajine with Butternut Squash, Orange, and Onions | 5 servings, 2 Blue, Weight Watchers

Instructions

  • 1.   Heat the oil over medium heat in a cast iron pot or a fireproof tajine dish. Season the chicken fillets with a pinch of salt and cook for 2 minutes until they are browned on all sides - cook them in batches if necessary. Set aside.
  • 2.   Reduce the heat and sauté the onions for 3 to 4 minutes until they become tender. Add the ginger, garlic, all the spices, and the remaining salt, then cook for an additional 1 minute while stirring. Pour in the broth and orange juice, scraping the bottom of the dish with a wooden spoon to incorporate the golden bits.
  • 3.   Add the butternut squash to the pot and bring to a boil. Reduce the heat, cover, and simmer for 5 minutes. Add the orange zest and slices, as well as the olives and raisins. Return the chicken and its juices to the pot, then simmer while stirring for 10 minutes, until the chicken is cooked and the squash is tender. Add the parsley and serve.

  • 40 g of raisin
  • 2 tablespoon of parsley
