Leek, Ginger, Carrot, and Bacon Gratin

A simple leek gratin, enhanced with ginger

Instructions

  • 1.   Preheat the oven to 180°C (350°F)
  • 2.   Cut the ginger into small pieces and divide it into three portions:
    - to cook the bacon
    - to cook the vegetables
    - for the sauce
  • 3.   Start by frying the bacon, and when the fat starts to render, add the ginger. Set aside.
  • 4.   Finely slice the leeks and carrots. Sauté them in the bacon fat, adding butter if necessary. Add the ginger. For faster cooking, cook over medium/high heat, add half a glass of water, and cover. Set aside.
  • 5.   Brown the remaining ginger in a knob of butter, then add the heavy cream. It's ready when it's melted.
  • 6.   In a gratin dish, layer the vegetables first, then cover with the bacon, pour the cream over it, and top with grated cheese.
  • 7.   Bake for 25 minutes (you can add the grated cheese after 15 minutes if desired).

  • 3 carrots
  • 2 tablespoon of sour cream
  • 2 leeks
  • 40 g of grated Comté cheese
  • 1 large fresh ginger
  • 1 small butter
  • salt (according to taste)
  • pepper (according to taste)
