2. Cut the ginger into small pieces and divide it into three portions:
- to cook the bacon
- to cook the vegetables
- for the sauce
3. Start by frying the bacon, and when the fat starts to render, add the ginger. Set aside.
4. Finely slice the leeks and carrots. Sauté them in the bacon fat, adding butter if necessary. Add the ginger. For faster cooking, cook over medium/high heat, add half a glass of water, and cover. Set aside.
5. Brown the remaining ginger in a knob of butter, then add the heavy cream. It's ready when it's melted.
6. In a gratin dish, layer the vegetables first, then cover with the bacon, pour the cream over it, and top with grated cheese.
7. Bake for 25 minutes (you can add the grated cheese after 15 minutes if desired).
