1. Peel the apple, grate it using a fine grater. Squeeze lemon juice over it. Beat the eggs for an omelette, add the grated apple, vanilla extract, and mix.
2. Grease a small non-stick pan with a diameter of 20 cm with 1 teaspoon of oil, and place it over high heat. When it is hot, pour half of the mixture and let it cook for 2 minutes over medium heat, then carefully flip it using 2 spatulas and cook for an additional minute. Make a second omelette with the remaining mixture (mixture for 4 servings = 2 omelettes).
3. In a bowl, mix the petit-suisses (or skyr) with sugar. Spread it on the omelettes, add some blueberries in the center, and roll them up. Cut the omelettes in half to form 4 wraps. If necessary, secure them with a wooden pick. Refrigerate for at least 1 hour before serving. This dessert/breakfast/snack will be even better after a few hours in the refrigerator.
