Stuffed Potatoes with Bacon and Cheese

Instructions

  • 1.   Preheat the oven to 180°C (350°F).
  • 2.   Wrap each well-washed potato in aluminum foil.
  • 3.   Place in the oven for 40 minutes.
  • 4.   Peel and finely chop the onion.
  • 5.   In a saucepan, sauté the onion and bacon without any fat.
  • 6.   Halfway through cooking, drain the fat released by the bacon.
  • 7.   Add the cream and the goat cheese cut into small pieces.
  • 8.   Let the cheese melt and then turn off the heat.
  • 9.   Remove the cooked potatoes from the aluminum foil.
  • 10.   Cut them in half and hollow them out with a spoon.
  • 11.   Fill them with the cream, cheese, and bacon mixture.
  • 12.   Place the potatoes back in the oven on the grill setting.
  • 13.   Sprinkle with washed and chopped chives and serve immediately.

  • 1 onion
  • 2 stalk of chives
