1. Preheat the oven to 180°C (350°F).
2. Wrap each well-washed potato in aluminum foil.
3. Place in the oven for 40 minutes.
4. Peel and finely chop the onion.
5. In a saucepan, sauté the onion and bacon without any fat.
6. Halfway through cooking, drain the fat released by the bacon.
7. Add the cream and the goat cheese cut into small pieces.
8. Let the cheese melt and then turn off the heat.
9. Remove the cooked potatoes from the aluminum foil.
10. Cut them in half and hollow them out with a spoon.
11. Fill them with the cream, cheese, and bacon mixture.
12. Place the potatoes back in the oven on the grill setting.
13. Sprinkle with washed and chopped chives and serve immediately.
