Fish with Chickpea Tomato Sauce | WW 9SP 1F

Instructions

  • 1.   Heat the oil in a large non-stick skillet over medium/high heat and sauté the onion for 5 minutes until tender. Pour in the crushed tomatoes, then fill the can halfway with water and pour into the skillet. Crumble the bouillon cube and add the herbs. Bring to a boil and cook for 5 minutes, then add the chickpeas.
  • 2.   Make four wells in the sauce and place a fish fillet in each. Cover and simmer for 7 to 8 minutes until the fish is just cooked.
  • 3.   Meanwhile, cook the green beans in a pot of boiling water for 6 to 7 minutes until tender. Divide the chickpea tomato sauce into shallow plates, top with a fish fillet and green beans, then serve with lemon wedges.

  • 2 sprig of rosemary
  • 800 g of chickpeas (canned, drained weight)
  • 400 g of cod
  • 300 g of green bean
  • 1 lemon
