Tomato Polenta

Polenta is the queen of weeknight dinners, as it is even quicker to prepare than a macaroni gratin! Here is an easy and flavorful recipe that can be served with chicken cutlets or steaks.

Instructions

  • 1.   Preheat your oven to 150°C (300°F).
  • 2.   Bring the milk and water to a boil in a saucepan, then gradually pour in the polenta while stirring constantly.
    Meanwhile, slice the onion into rounds, sauté in a hot pan with a tablespoon of oil, then add the tomato puree. Once the mixture is well combined, add the oregano, salt, and pepper.
    Cook according to the instructions on the polenta package.
  • 3.   Once cooked, remove from heat and add 150 g (1 1/2 cups) of grated Parmesan cheese. Season with salt and pepper, and mix well.
  • 4.   Pour the polenta onto an oiled baking sheet.
  • 5.   Bake at 180°C (350°F) for about 15 minutes. Towards the end of cooking, drizzle with tomato sauce.
  • 6.   Serve and enjoy hot.
