Italian-style White Beans (Low GI - Plant-based)

Instructions

  • 1.   Sauté the onion and garlic in oil for 3 minutes.
  • 2.   Add the tomatoes, plant-based cream, parmesan, and 1 teaspoon of pesto. Season with salt and pepper, and mix well.
  • 3.   Add the drained white beans. Cook for 5 minutes, adding water if necessary.
  • 4.   In each plate, place burrata on top of the white beans, along with a little pesto, basil, and pine nuts.

  • 1 canned white beans (drained weight)
  • 1 canned crushed tomatoes
  • 1 burrata
  • 1 onion
  • 1 garlic clove
  • 1 teaspoon of olive oil
  • 4 tablespoon of cashew cream
  • 2 tablespoon of grated parmesan
  • 4 tablespoon of pesto
  • 4 sprig of fresh basil
  • 1 handful of pine nut
