Instructions

  • 1.   Clean, remove seeds, and slice the bell peppers.
  • 2.   Peel and thinly slice the onions.
  • 3.   Clean and quarter the tomatoes.
  • 4.   Preheat the oven to 200°C (400°F).
  • 5.   Season the chicken thighs with salt and pepper, then place them in an oven-safe dish.
  • 6.   Add the vegetables and thyme on top.
  • 7.   Drizzle with olive oil and pour a glass of water into the bottom of the dish.
  • 8.   Bake for 40 minutes, flipping the chicken thighs halfway through cooking.
  • 9.   Serve hot.
