Instructions

  • 1.   Peel the carrot and grate it with a large grater. Do the same with the zucchini but cut it into cubes. Finely slice the preserved lemon.
  • 2.   Heat the oil over high heat in a non-stick skillet and cook the beef steak for 1 minute 30 seconds on each side for a medium-rare cooking. Set aside.
  • 3.   Replace the meat with the zucchini cubes and sauté them for 5 minutes, stirring. Add the carrots, lemon, and cumin. Cook for an additional 2 minutes.
  • 4.   Slice the beef and prepare your Lunchbox by placing the vegetables on a bed of green salad, with the beef slices on top. Season with salt and pepper. Just as delicious hot or cold!
