Quick Chicken and Leek Colombo Recipe

Instructions

  • 1.   Slice the leek, half a bell pepper, and the onion.
  • 2.   In an oiled pan, sauté them for 5 minutes with the chicken strips.
  • 3.   Add minced garlic, then the Colombo spices, salt, and pepper. Mix well and pour in the coconut juice.
  • 4.   Let it simmer on low heat for another 5 minutes. Serve immediately with rice.

  • ½ red bell peppers
  • 20 cl of coconut milk
  • 1 tablespoon of olive oil
  • 2 tablespoon of colombo spices
