Canadian Maple Syrup Pancakes

Ingredients: - 2 eggs - 150 ml of milk - 1 packet of vanilla sugar - 125 g of flour - 1 tsp of baking powder or baking soda - 2 tbsp of sugar - a pinch of salt :

Instructions

  • 1.   1. In a large bowl, mix the dry ingredients: flour, baking powder, sugar, salt, and vanilla sugar.
  • 2.   2. In another bowl, mix the 2 egg yolks with the milk, then add it to the dry ingredients and mix until you obtain a thick pancake batter. Let it rest for 15 to 30 minutes.
  • 3.   3. Beat the egg whites until stiff peaks form, then gently fold them into the batter.
  • 4.   4. Cook in a small, well-heated, buttered or oiled pan for about 1 minute on each side. Serve with maple syrup and optionally with blueberries.
