Instructions

  • 1.   In a bowl, mix the buckwheat flour and salt, and gradually whisk in the water (and milk).
  • 2.   Add the egg.
  • 3.   Finish with the oil and let it rest.
  • 4.   Let it rest for 1 hour.
  • 5.   For cooking, spread the slightly runny batter using a 'rouable' (a utensil shaped like a "T").
  • 6.   Cover the pancake with ham, then mushrooms, egg, and grated cheese.
  • 7.   Fold the pancake.
  • 8.   Cook one side, then flip it.
