. In a bowl, mix the buckwheat flour and salt, and gradually whisk in the water (and milk).

. Add the egg.

. Finish with the oil and let it rest.

. For cooking, spread the slightly runny batter using a 'rouable' (a utensil shaped like a "T").

. Cover the pancake with ham, then mushrooms, egg, and grated cheese.

. Fold the pancake.

. Cook one side, then flip it.
