Orchard Strudel

Instructions

  • 1.   Peel the apples and quinces and cut them into cubes. Chop the walnuts. Melt the butter in a pan and add the fruits. Sprinkle with sugar, then add the walnuts and raisins. Cook over low heat until the fruits are tender, stirring occasionally.
  • 2.   Preheat the oven to 425°F (220°C). Flour a work surface, roll out the dough into a rectangle about 14 inches by 8 inches. Place it on a baking sheet lined with parchment paper.
  • 3.   Arrange the fruits along the length of the dough, leaving 1 to 1.5 inches at the top and bottom. Close the dough by sealing the two edges with a little water, fold the ends under the roll to seal it perfectly.
  • 4.   Brush the strudel with the egg yolk using a brush. Sprinkle with brown sugar, then bake for 40 minutes, lowering the temperature to 400°F (200°C). Serve warm.
