Chinese-style Tomato and Egg Stir-Fry

Instructions

  • 1.   Step 1
    Chop the garlic and ginger. Cut the green part of the spring onion into pieces (if you don't have any, you can replace it with the green part of a leek). Beat the eggs and add some of the spring onions and half a teaspoon of salt.
  • 2.   Step 2
    Cut the tomatoes into medium-sized pieces.
  • 3.   Step 3
    Prepare the eggs. Cook them while stirring constantly until they are half-cooked. The cooking should be stopped when they are still slightly moist. Set them aside for later use.
  • 4.   Step 4
    Heat the oil in a pan. As soon as the oil is hot, add the garlic, ginger, and the remaining green part of the spring onions. Cook them for 1 minute over medium heat.
  • 5.   Step 5
    Add the tomatoes over high heat and mix everything for 2 to 3 minutes.
  • 6.   Step 6
    Add the cooked eggs, 1 tablespoon of light soy sauce, 1 teaspoon of salt, a pinch of sugar, and mix well. Cook everything for 1 minute and it's ready!

  • 1 vegetable oil
  • 1 sesame oil (optional)
