Instructions

  • 1.   Cook the quinoa in water and toast the almonds in a dry pan. Set aside.
  • 2.   Sauté the minced onion and chopped garlic in olive oil.
  • 3.   Add whole cherry tomatoes and spinach leaves. Cook over medium heat for 10 minutes.
  • 4.   Add washed red beans and tomato sauce and heat through.
  • 5.   Pour in the hot quinoa and add the spices. Mix well.
  • 6.   Serve on a plate, garnish with small pieces of burrata cheese, minced green onions, and almonds.

Notes & Suggestions

  • Piri piri is a spice.

  • 150 g of tomato sauce
  • 1 onion
  • 1 garlic clove
  • 1 tablespoon of olive oil

  • 1 handful of sliced almond
  • 3 teaspoon of piri piri
  • 2 green onions
