Low-carb buckwheat blinis with zucchini and bacon. Gluten-free too! I used them plain as an appetizer and as a bread replacement for burgers (see previous post). Here's the recipe: - 1 grated zucchini, sautéed in a pan with 1 tbsp of olive oil - 70g of buckwheat flour - 4g of baking powder - 50g of bacon - 50g of ricotta or 70g of feta cheese - 3 eggs

Instructions

  • 1.   Mix the dry ingredients and then the wet ones. Add the zucchini and bacon at the end.
    Then cook the blinis on a griddle.
