Christmas Cake: crunchy almond/walnut granola biscuit on a Chocolate/orange mousse. I'm super happy with my recipe because it's completely invented. I was afraid of messing up the granola biscuit because I had never made it before, but it's absolutely delicious ????. Normally, my cake was supposed to have the shape of a yule log, but there were no yule log molds left in my supermarket, pfff... As a result, I settled for a pastry ring. It's less pretty, but it was super tasty, even my husband loved it and had seconds! And he's not a fan of granola. So, the recipe!!!! _????Crust: - 30g of oat flakes - 10g of oat bran - 35g of almond flour - 25g of almonds and 25g of walnuts, chopped - 50g of melted butter or melted coconut oil - 30g of coconut sugar - 5 cl of oat milk or other milk Mix everything together, press into a pastry ring, and bake for 10 minutes at 180°C (350°F). _????Mousse: - 200g of 60% dark chocolate - 30 cl of cold whipping cream with 30% fat - 1 orange Whip the cream until stiff peaks form. Melt the chocolate and add it directly to the cream, gently mixing. Grate the zest of half an orange into the mousse. When the crust is cold, fill the ring with the mousse until the top. Decorate with a little zest. Then refrigerate for 1 hour before serving. If you don't have oat bran, you can replace it with oat flakes.
