Today, I propose to you absolutely delicious soft cookies. To avoid butter, I used 100% hazelnut butter, it's better for your health and I love the taste. You often ask me where I find certain products, so this hazelnut butter, I buy it from @greenweez_bio_en_ligne, it's my favorite because it remains sufficiently liquid and its taste is to die for. In fact, I put it every day as a sauce on my yogurt to avoid sweetening them. And there you have a healthy snack with plenty of protein thanks to legume flours and nuts.

Instructions

  • 1.   The recipe for 10 cookies 🍪:
    - 60g almond powder
    - 60g hazelnut butter @greenweez_bio_en_ligne (which you see in the photo, they call it cream but it's 100% hazelnut)
    - 60g unsweetened applesauce
    - 40g chickpea flour
    - 40g quinoa flour @celnatofficiel found at greenweez
    - 30g coconut sugar
    - 50g dark chocolate chips 65%
    - 20g sunflower seeds
    - 1 pinch of baking soda
  • 2.   Mix the 2 flours, almond powder, coconut sugar, and baking soda.
  • 3.   Add the applesauce and hazelnut butter. Press firmly with a spoon to mix and obtain a dough that holds together. Finish with the chocolate chips and sunflower seeds.
  • 4.   On a non-stick mat, form piles using 2 spoons because it sticks a little. Bake for 12 minutes at 185°C. The top should be golden.
