Light Homemade QUESADILLAS with 0 sugar and low glycemic index

Light and low glycemic index homemade QUESADILLAS to fill as you like, according to what you have in your fridge. Here is my little recipe for quesadillas, wraps or Mexican pancakes, I don't know how you want to call it:

Instructions

  • 1.   For 5 quesadillas:
    - 100g of hulled barley flour
    - 60g of whole wheat flour
    - 40g of oat bran
    - 300 mL of water (300g)
    - 1 egg
    - 25g of olive oil
    - 1 tsp of cumin
  • 2.   1⃣ Mix the flours, bran, and cumin. Season with salt and pepper. Add the water in the center and mix gradually to avoid lumps. Crack the egg and pour in the olive oil.
  • 3.   2⃣ Cook in a pan with a drizzle of olive oil like pancakes, on each side.
  • 4.   Classic filling for me that day: smoked salmon, lemon juice, Chavroux cheese, avocado, and cilantro.

  • 40 g of oat bran
  • 300 g of water
  • 1 egg
  • 25 g of olive oil
  • 1 teaspoon of ground cumin
